My idea is to re-create a traditional British roast dinner taste in every mouthful. The food is specially prepared for each event to the host's requirements.



Slow Roasted-Hog, with Seasalty Roast Crackling
I created a mildly spiced seasoned rub, which the whole shoulder is smothered in prior to being slow-roasted for 8+ hours, once rested it's gently puled mixing in its cooking juices, giving the most succulent, mouth-watering flavour of a Roast Pork Sunday Dinner! It's served in a soft white roll, with home-made seasalted crackling, locally grown apple relish & roasted sage stuffing.Seasalty Roasted Crackling
Pork rind, dried and salted, then gently rendered in the oven with sea-salt, until, both super crispy, and full of flavour.
